Increasing Demand from Processing Industry

  • The demand for cranberries from the processing industries has been rising as the demand for processed cranberry products is increasing tremendously, especially in North America. The various processed products through cranberries include juices, jams, jellies, sauces, dried cranberries, powders, extracts, and others. Cranberries are indigenous fruits consumed in various forms, including fresh, ground, mashed, and baked with cornmeal. Dried cranberries are mixed with dried meat.
  • Cranberry poultices, medicinal teas, and dyes were also a few forms through which the demand for cranberries is increasing. Only about 5 % of cranberries produced in the United States are sold fresh, and the remaining 95% are processed, most commonly for juice and juice blends. 
  • Production in 2021 was down from previous years. However, the production of cranberries will be gradually increasing. This increase would be partly driven by the rise in cranberries used in processing. The area under cultivation and production of cranberries is increasing globally due to the increased use of cranberry in the processing industry. For instance, cranberry production globally in 2021 was 0.4 million metric tons.

North America Dominates the Market

  • Cranberries are majorly grown in the Nothern Climes of North America, and most of the cultivation is observed in areas including Massachusetts, Wisconsin, New Jersey, Oregon, and Washington State. Around 200 billion cranberries are harvested in North America annually, with annual sales exceeding USD 1.50 billion. Ocean Spray Cranberry Growers Cooperative is one of the major producers of Cranberries in North America. This cooperative alone accounted for 90% of the cranberry yield in the United States.
  • The United States is the world's leading cranberry producer, followed by Canada. The United States farmers harvested 16 thousand hectares of cranberries in 2021, with a production volume of 0.3 million metric tons. Production of cranberries has gradually increased consumption has expanded from seasonal to year-round. This increase is partly driven by the rise in cranberries used in processing.
  • Ocean Spray, the largest processing company in the United States, handles over 50% of the country's cranberry harvest annually and sources fruit from all major producing areas. Ocean Spray also imports substantial volumes from both Eastern and Western Canada. The company manufactures all major cranberry products, including fresh cranberries, cranberry concentrate, sweetened dried cranberries (SDCs), cranberry-based juices, and cranberry sauce. Hence, increased demand for these products drives the cranberries market in North America.
